I've struggled lately on my weight loss journey. I lost all of the motivation and determination that I had back in December and early January. I lost it when my grandma was diagnosed with her leukemia, but I was able to maintain for quite a long time. Even after she passed away, just 6 weeks after learning about the leukemia and I was facing very strong emotions and terrible grief, I still continued to maintain. As things have settled down and we have cleaned out all of her things and reality has truly set in that she is gone, I find myself still grieving as strongly as I did from day one, it seems. I have turned back to my vice, as terrible as I know it is for me, and as badly as I really don't want to do it... I have been drinking pop. Everyday. Many times a day. Probably about 5 pops a day. And I drink regular pop, so lots and lots of empty, liquid calories. Combined with the issues I've been having with my feet (and my lack of motivation, self-control, etc.), this has led to my gaining back the 12 pounds I had lost. So now I'm back where I started.
And it just plain sucks.
I have tried a few times lately to get my motivation back, but have not been too successful. But I'm hoping things will be different now. A good friend of mine and I have agreed to be each other's accountability partners. She also struggles with weight and losing it, so we both know what the other is going through. We are trying to push each other, praise each other for our accomplishments, keep each other motivated, and just keep on track of each others food and exercise logs through the website FitDay. This is our first week at it, but so far so good.
I have also been reading the book "Believe It, Be It: How Being the Biggest Loser Won Me Back My Life," by Ali Vincent. It is a very inspiring book and is really helping me see some things about myself. I believe that most people that say they want to lose weight just want (and expect) it to be easy... or at least easier. I know I have. But I also know that its not easy and it never will be easy. I also have realized that losing weight and getting healthy really involves a lot more than just exercising and eating better. I realize you have to face the mental issues and emotions that have been holding you back all this time. You have to discover and admit to yourself and others that you have a problem, that you're not happy, and most importantly why you're not happy. And I don't mean what parts of your body you're not happy with. Really why you're not happy. What caused you to make those bad choices that led you to where you stand now.
So I realize I need to admit some things before I can really move forward... so I figured why not just put it all out here on my blog? I realize this is just a start and I still have a lot of discovering to do about myself. But this will help me to do that and will give me the kickstart I need, at least.
So here goes...
I'm not happy with myself. I feel like I have lost so many of my dreams, goals, and my sense of self. There are (many) days when I just don't want to go anywhere. I don't want people to see me looking this way. I'm ashamed of the way I look. And I don't like people knowing I feel badly about myself.
I also don't like making excuses (why are we all tuned to be so good at making them, though?). I know I have made bad choices during the last 8 or 9 years as I've put on the weight equivalent to an extra person. I need to just forgive myself for these bad choices and move on. I thought I had, but I realize now that I really haven't. So I am trying.
I have figured out what some of the "causes" are for my weight gain, but I don't know that I'll share them all on my blog. I may share with some of you individually, but I don't want to air my dirty laundry here. Its tough to face some of the old issues... digging up the past sucks... especially when I thought I'd moved on from then... and I have in most ways, but I need to face some things again to (hopefully) fully overcome them... I guess that is part of the process. :)
So I am going to move forward and I will be successful at the end of this journey. It'll be a long journey, but its one that needs to be taken.

Meal plans and the week ahead
Three more fruit trees have been added to the orchard. We now have added 1 balaton tart cherry, 1 redhaven peach, 2 sweet cherries - bing and emperor francis, and 1 braeburn apple tree. Add those to the existing 2 bosc pears, 1 oriental pear, 3 bartlett pears, and 7 or 8 random apple trees that I haven't identified yet. I think we're in good shape. I've been doing lots of research into backyard organic orcharding, but I still have a long ways to go. I will be focusing on that research a lot this week. I just feel like I need to get my plan up and running... like 3 weeks ago... since the bartletts have been flowering and the others are soon to follow. Controls need to be established now if I have a chance of beating the issues in the pre-existing orchard (apples and pears).
This week will be another fun week. Today is low key, just doing what we do. Tuesday I have Zumba. Wednesday I will likely be in Detroit for meetings. Thursday is a big day at work with our presentation and hearing on the DRIC. We've been working for years now and it all leads to Thursday. We'll get an up or down vote in the next month, so its going to be pretty intense for awhile. Friday is my flex day, which means Kindermusik. I think Carson and I are going to go visit a cow share farm to check it out after Kindermusik if its not raining. Saturday we are heading out to Holland for Tulip Time in the morning - assuming its not raining. Then we'll be heading back to the Detroit area to hang out with some friends.

Spinach and Chickpeas
Espinacas con Garbanzos (Spinach and Chickpeas)
1/2 pound dried chickpeas, cooked until soft and tender* or two 15-ounce cans of chickpeas, drained and rinsed
6 tablespoon olive oil
1 pound spinach, washed
A hefty 1-inch slice from a country loaf or about 2 slices from sandwich loaf bread, crusts removed and cut inset small cubes
1/2 cup (2 ounces) tomato sauce
3 garlic cloves, thinly sliced
1/2 teaspoon ground cumin
Pinch of red pepper flakes
1 1/2 tablespoons red wine vinegar
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper
Lemon juice, to taste
Place a large saucepan over medium heat and add half the olive oil. When it is hot, add the spinach with a pinch of salt. Do in batches, if necessary and stir well. Remove when the leaves are just tender, drain in a colander and set aside. (I skipped this step at this point and just added the spinach at the end to wilt.)
Heat 2 more tablespoons olive oil in a frying pan over medium heat. Fry the bread for about 5 minutes or until golden brown all over, then the remaining tablespoon of oil and the garlic, cumin and pepper. Cook for 1 minute more or until the garlic is nutty brown. (I changed this step and just toasted my bread.)
Transfer to a food processor, blender or mortar and pestle along with the vinegar, and mash to a paste. (I skipped the food processor and just added the ingredients to te skillet.) Return the mixture to the pan and add the drained chickpeas and tomato sauce. Stir until the chickpeas have absorbed the flavors and are hot. Season with salt and pepper. (This is when I added my spinach to wilt down.)
If the consistency is a little thick, add some water. Add the spinach and cook until it is hot. Check for seasoning and serve with paprika on top, or on fried bread toasts (as the Spanish do).

Raw Lettuce Wraps
Romaine lettuce leaves
Avocado, smashed
Cucumber
Carrots
Any other veggies you like - bell pepper, mushrooms, tomato, onion, etc.
Wash your lettuce and lay out the number of leaves you need. Smash your avocado and spread on the romaine leaves. Use a veggie peeler or cut in small dices the remaining veggies. Layer them on top of the avocado. To eat, roll in the sides of the romaine leaf to make a wrap and enjoy!

Butterscotch Bars
Butterscotch Bars
1 cup melted butter
1 3/4 cups sucanat
2 eggs
1 tsp. vanilla extract
1 1/2 cups whole wheat flour
Stir melted butter and sucanat together. Add eggs and vanilla, mixing well. Stir in flour and mix until well combined. Pour batter into a 9×13 inch baking pan. Bake at 350° for 25 minutes.

Crockpot Short Ribs
I ended up making short ribs for dinner the other night. I used a recipe from AllRecipes and served them with mashed potatoes and roasted asparagus. I used short ribs from our beef we bought last summer. These were so tender (and kinda fatty) and so yummy. The meat just fell off the bones. The sauce that these cook in is absolutely delicious! We all loved this meal. Although Carson's favorite was the asparagus - that still seems to be one of his favorite veggies. I forgot to take a picture.
Crockpot Short Ribs
2 tablespoons all-purpose flour
1 teaspoon salt
1/8 teaspoon ground black pepper
3 pounds beef short ribs
2 tablespoons olive oil
1 slice onion, sliced
1/2 cup dry red wine
1/2 cup chili sauce
3 tablespoons packed brown sugar
3 tablespoons vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon chili powder
2 tablespoons all-purpose flour
1/4 cup water
In a small bowl, combine 2 tablespoons flour, salt, and pepper. Coat the short ribs with the flour mixture. In a large skillet, heat the olive oil over medium-high heat. Brown short ribs in olive oil. (I skipped this entire step)
In a slow cooker, combine onions, wine, chili sauce, brown sugar, vinegar, Worcestershire sauce, mustard, and chili powder. Mix thoroughly. Transfer the short ribs from the skillet to the slow cooker. Cover, and cook on Low for 6 to 8 hours.
Remove ribs, and turn the slow cooker control to High. Mix the remaining 2 tablespoons of flour with 1/4 cup water, and stir into the sauce. Cook for 10 minutes, or until slightly thickened.

Lemon Glazed Berry Scones

Lemon Glazed Berry Scones
2 cups unbleached flour, plus more for rolling berries
1 tablespoon baking powder
1 teaspoon salt
1/3 cup sugar
Zest of one lemon
1/4 cup unsalted butter, chilled and cut in chunks
3/4 cup buttermilk
1 egg
1 pint berries (I used frozen blueberries)
Turbinado Sugar, for sprinkling on scones
Preheat oven to 400 degrees F.
In a large bowl, sift together flour, baking powder, salt, sugar, and zest; mix thoroughly. Cut in butter using 2 forks or a pastry blender. The butter pieces should be coated with flour and resemble crumbs.
In another bowl, mix buttermilk and egg together, and then add to the flour mixture. Mix just to incorporate, do not overwork the dough.
Roll berries in flour to coat, this will help prevent the fruit from sinking to the bottom of the scone when baked. Fold the blueberries into batter, being careful not to bruise. Drop large tablespoons of batter on an ungreased cookie sheet. I used my Silpat! Sprinkle scones with Turbinado sugar.
Bake for 15 to 20 minutes until brown. Cool before applying the lemon glaze.
Lemon Glaze:
2 cups powdered sugar, sifted
2 lemons, juiced and zested
To prepare Glaze: combine sugar, zest, and juice and whisk until smooth. Drizzle or brush on top of scones.

4 cooked, boneless chicken breast halves, shredded (I used some pre-cooked and shredded chicken that I had frozen)
1/3 cup prepared Ranch salad dressing (I used mayo and some of my ranch dressing mix)
1 1/2 Tbsp. chopped fresh dill
1 cup cashews (I chopped mine to make it safer for Carson to eat)
1 avocado - peeled, pitted and diced
salt and pepper to taste
In a large bowl, mix the cooked chicken, dressing, dill, cashews, and avocado. Season with salt and pepper. Cover, and chill in the refrigerator at least 30 minutes.
I served mine on homemade sandwich bread with provolone cheese and baby spinach leaves.

What crazy weather we are having these last few days. We dropped 20 degrees per day for three days... 80s, 60s, 40s... and did I mention that it snowed yesterday when we were outside in shorts on Thursday? Only in Michigan. :-P Today looks better, at least, and so does the rest of the week.
Our orchard and berry patches grew last week. I planted the two fruit trees we picked up, the five blueberry bushes, and seventeen raspberry bushes. I also planted 25 crowns of asparagus and a few rows of each of lettuce, spinach, and rainbow chard. I'm a little late getting the greens in the ground, but they'll still be ok. We're anxious for them to all start growing, especially since we've been eating more and more raw veggies and salads these last couple of weeks.
This week will be pretty quiet. We don't have any plans today. We're just hoping to get a lot done outside and around the ranch. Tuesday I have Zumba. Wednesday I have a hair appointment... I had my dates mixed up last week. Thursday is Earth Day! We'll be doing some fun things to help Carson learn about this important day. Friday I am going to pick up three more fruit trees that we've ordered and we're planning to have a family movie night/date night in since it looks like it'll be raining. Saturday morning, Carson and I are going to do a 2K walk for Kids in the Kitchen with some friends of mine... as long as the weather is good, at least. And we may be going over to my friend Tiffany's house for a BBQ for dinner after the walk and festivities that follow the walk, again weather dependent.

Veggie Quinoa Salad with Pesto Dressing
Vegetable-Stuffed Quinoa Salad with Pesto Dressing
2 cups quinoa (cooked in 4 cups water)
1 bundle asparagus, cut into 1-inch pieces
1 red pepper, chopped (I used a green one since that's what I had)
1/2 red onion, roughly chopped (I added some chopped chives from my garden instead)
1/2 english cucumber, cut into bite-sized pieces
1 bunch flat-leaf parsley, chopped
1 can garbanzo beans, rinsed and drained
6 ounces feta, crumbled
4 ounces of pesto
2 tablespoons apple cider vinegar
olive oil (some for roasting asparagus and some for the dressing)
salt
pepper
Toasted almonds (optional)
Cook the two cups of quinoa by combining it with four cups of water. Bring to a boil and reduce temperature. Simmer for 15-20 minutes, until it is tender. When it is finished cooking, spread it out on a cookie sheet to cool.
Spread the asparagus out on a small cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast at 425 degrees for 10-15 minutes.
Combine chopped red pepper, onion, cucumber, parsley and drained garbanzo beans in a large bowl.
Whisk the pesto, vinegar and a drizzle of olive oil together until runny. Season with salt and pepper to taste.
Add quinoa to the chopped vegetables. Gently stir to combine. Add the crumbled feta and dressing and fold in. Top with toasted almonds and serve. Can be made up to 24 hours in advance.

Meal plans and the week ahead
We got back last night from the Cleve. We had a great time! Cleveland has such a bad rap, often likened to Detroit, but it has come farther than Detroit has in recent years. Anyway, we found it to be a nice place and with it only being 3 1/2 hours away, it is a great destination for a weekend trip. So now we're getting back into the swing of things at home. Tuesday I was supposed to have Zumba, but I got a call on Friday saying its canceled this week. Wednesday I'm getting my hair done. Thursday we'll be picking up a sweet cherry and a tart cherry tree in Shiawassee County. Friday is supposed to be my flex day and Kindermusik, but it is going to be a pretty big day at work, so I will likely be in Detroit at a press event in the morning and then at Schoolcraft college in the afternoon for a Joint House Committee Hearing. I'm thinking I might switch my flex day to Tuesday or maybe next Friday instead. We'll see. We also have to pick up our blueberry bushes in Ingham County on Friday. Saturday we're heading to East Lansing to MSU Small Animals Day with my old college roommate, Tiffany, her husband, Mark, and son, Tyson. Should be a fun week!
As far as projects this week... we'll be working outside whenever we can. Tonight we'll be tilling up the raspberry patch so I can plant the raspberry bushes that arrived from Fedco over the weekend. I'll also be planting the asparagus, as well as a round of lettuce and spinach. I'll work on a few other remaining spring cleaning projects on the nights that it is raining. Otherwise, we'll just spend our time outside as much as possible.

As far as projects this week... we'll be working outside whenever we can. Tonight we'll be tilling up the raspberry patch so I can plant the raspberry bushes that arrived from Fedco over the weekend. I'll also be planting the asparagus, as well as a round of lettuce and spinach. I'll work on a few other remaining spring cleaning projects on the nights that it is raining. Otherwise, we'll just spend our time outside as much as possible.

Raw Carrot & Cucumber Salad with Peanut Dressing
Anyway, we tried a raw carrot and cucumber salad with one of our meals this week. I found the recipe on Gone Raw. This was really good. I didn't use a chili pepper in my dressing since I didn't have one on hand and didn't feel like buying one. I just squirted in a little Sriracha chili sauce - not much because I didn't want to make it too spicy for Carson. We all liked it and I think I'd definitely make it again!

Raw Carrot and Cucumber Salad with Spicy Peanut Dressing
Salad:
2 medium-large carrots
1/2 cucumber
hemp or sesame seeds
Spicy peanut dressing:
1/4c peanut butter (or almond butter if you prefer)
1.5 tbsp tamari (or nama shoyu to be truly raw)
1 tbsp sesame oil
1 tbsp lime juice
cayenne pepper or chili pepper, finely minced and seeded to taste (I just used a squirt or Sriracha)
1/4c water (start with 1/8c and add more as needed)
Add a bit more water as needed to get the right consistency
Whisk together the dressing ingredients in a bowl.
Using a veggie peeler, peel thin strips of the cucumber and carrots. You may want to chop the veggies in half first so your pieces aren't too big. Put into a bowl and toss with the dressing until well coated. Top with hemp seeds or sesame seeds.
Note: because of the water in the cucumber, if this salad is saved for the next day or two, it can get watery. So, store the salad separate from the dressing and when you want to eat it, take some and put in a bowl and dress.
Spinach and Sun-Dried Tomato Risotto
As I've mentioned, I've been trying to clean out some things from the pantry, fridge, and freezer for the last few weeks. When I came across this recipe for spinach and sun-dried tomato risotto on Kati's site, I knew we had to try it. Not only did it sound delicious, but I had some organic arborio rice, sun-dried tomatoes, and spinach that I needed to find some uses for. So I made it for dinner this week and it was absolutely delicious! After every bite, Carson declared it "deeee-wishous!" He loved it! I loved it! Kevin loved it! A definite keeper!

Spinach and Sun-Dried Tomato Risotto
3 Tablespoons olive oil
4 cups spinach
1 onion, chopped
1 1/2 cups risotto rice
4 cups chicken stock
1/2 cup sun-dried tomatoes, chopped
2 teaspoons basil, fresh and minced or dried flakes
1/2 cup grated asiago or parmesan cheese
1/2 cup part skim ricotta cheese
Salt
Pepper
In a food processor, finely chop spinach with 1 tablespoon of oil. (I also added the tomatoes)
In a frying pan or wok, heat the oil and sautée the onion until transparent. Add the rice, stirring until the rice is a little transparent. Add the tomatoes. (I actually kept my tomatoes out and chopped them up in the food processor with the spinach.) Pour in the stock, 1/2 cup at time, continuously stirring. Do not add more stock until the rice absorbs the already added stock. After about 30 minutes the rice should be creamy.
Turn off the heat and stir in the spinach, ricotta, basil and cheese. Add salt and pepper to taste. Let stand for 3-4 minutes before serving.

Pesto Cheesy Chicken Rolls
Another catch-up post. I made these a few weeks ago and we're having them again this week. These are super easy, especially with only three ingredients, and super tasty and a great way to use up some homemade pesto! I got the recipe from AllRecipes. We all love them! I made them as written below the first time. This week, I'm going to use up some irish white cheddar cheese with some garlic scape pesto. Yum!

Pesto Cheesy Chicken Rolls
4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup prepared basil pesto
4 thick slices mozzarella cheese
Preheat the oven to 350 degrees F (175 degrees C).
Spread 2 to 3 tablespoons of the pesto sauce onto each flattened chicken breast. Place one slice of cheese over the pesto. Roll up tightly, and secure with toothpicks. Place in a lightly greased baking dish.
Bake uncovered for 45 to 50 minutes in the preheated oven, until chicken is nicely browned and juices run clear.

Scone Dough:
2 cups all purpose flour
1/3 cup) light brown sugar
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
¼ teaspoon nutmeg
1 ½ teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into pieces
1/3 cup white chocolate chips
1/2 cup buttermilk
1/2 cup canned pure pumpkin
1 teaspoon pure vanilla extract
1 tablespoon cream
Turbinado sugar for sprinkling the tops of the scones
Spice Glaze:
1c. powdered sugar
1/2t. cinnamon
1/8t. cloves
Sprinkle of nutmeg
Milk
Add as much milk until desired consistency. Drizzle or spread over scones.
Preheat oven to 400 degrees F and place rack in middle of oven. Line a baking sheet with parchment paper or Silpat.
In a large bowl, whisk together the flour, sugar, spices, baking powder, baking soda and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. I use my hands! The mixture should look like coarse crumbs. Stir in the white chocolate.
In a separate bowl mix together the buttermilk, pumpkin puree and vanilla and then add the buttermilk mixture to the flour mixture. Mix just until the dough comes together. Do not over mix the dough.
Transfer to a lightly floured surface and knead dough gently four or five times and then pat the dough into a circle that is about 7 inches (18 cm) round and about 11/2 inches (3.75 cm) thick. Cut this circle in half, then cut each half into 3 pie-shaped wedges (triangles). Place the scones on the baking sheet. Brush the tops of the scones with the cream and sprinkle a little Turbinado sugar on top.
Place the baking sheet inside another baking sheet to prevent the bottoms of the scones from over browning. Bake for about 20 minutes or until golden brown and a toothpick inserted in the middle comes out clean. Transfer to a wire rack to cool and drizzle scones with the glaze.

1 (20 ounce) can pineapple chunks, drained
2 (11 ounce) cans mandarin oranges, drained
1 (10 ounce) jar maraschino cherries, halved
1 (16 ounce) package miniature marshmallows
1 (16 ounce) container sour cream (I used half sour cream and half vanilla yogurt b/c I only had half a container of sour cream left)
In a large bowl, combine the pineapple, oranges, cherries, marshmallows and sour cream together. Chill and serve.

2 cups (10 ounces) unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon sugar
3/4 teaspoon table salt
1 cup cold buttermilk
8 tablespoons unsalted butter, melted and cooled slightly (about 5 minutes), plus 2 tablespoons melted butter for brushing biscuits
Adjust oven rack to middle position and heat oven to 475°F. Whisk flour, baking powder, baking soda, sugar, and salt in large bowl. Combine buttermilk and 8 tablespoons melted butter in medium bowl, stirring until butter forms small clumps.
Add buttermilk mixture to dry ingredients and stir with rubber spatula until just incorporated and batter pulls away from sides of bowl. Using greased 1/4-cup dry measure, scoop level amount of batter and drop onto parchment-lined rimmed baking sheet (biscuits should measure about 2 1/4 inches in diameter and 1 1/4 inches high). Repeat with remaining batter, spacing biscuits about 1 1/2 inches apart. Bake until tops are golden brown and crisp, 12 to 14 minutes.
Brush biscuit tops with remaining 2 tablespoons melted butter (I skipped this). Transfer to wire rack and let cool 5 minutes before serving.

Meal plans and the week ahead
Happy belated Easter! I'm posting a day late... I haven't been on a computer at all since last Wednesday... and its been very nice! :) So anyway, here's my weekly planning post... It's going to be a fairly busy week topped out with a (hopefully) fun trip! Yesterday we went to church with my in-laws in the morning. Then we went over to my mom's house for dinner with my extended family. I don't have Zumba this week since its spring break. It'll give me more time to prep/pack for our trip. We leave Friday morning for Cleveland for the weekend. My cousin, Kyle, is going to be staying at our house while we're gone. So I want to make sure the house is nice and clean and that we have clean bedding on our bed for him before we leave on Friday. Plus, I hate coming home to a dirty house. I always have to clean, clean, clean before we leave for a vacation. I go so far as to run the vacuum one last time right before we walk out the door... I know, its crazy... but I also know quite a few other people that do the same thing, so I guess its not too crazy. :)
So we didn't work on Carson's new room at all last week. It was just too nice outside, plus Kevin ended up in Lafayette again for a couple of days. So we still do not have painted walls or doors or trim. Oh well. I'm not too concerned with it. It will get done in due time. Right now, we're trying to get as much done outside as we can before things start getting overgrown. We've been making very good progress and have one debris pile cleared and about 85% of the enormous debris pile has been cleared. We'll be finishing that up and cutting down nine trees soon, as well... at least we hope we can cut them down on our own. They're pretty huge/tall trees - 4 dead ash trees, 2 half dead pines, and 3 huge infested old apple trees that are within the fenced part of the yard (where I don't want them). And we also have some landscaping projects to tackle in the front yard in the next few weeks, as well.
Anyway, this week looks like it'll be raining most days. On the days it doesn't rain, we'll continue working outside to finish up the debris pile. If it rains as many days as it looks like it will be, hopefully we'll get at least one coat of paint on the walls in Carson's new room. My focus, though, will be packing for our weekend getaway and cleaning.

Creme de Menthe Cake
I have made this cake many times in the past. Its so good. I got the recipe from a friend of mine at work, Kathy. In the past, I always made it the "easy way," as I've described below. But this past weekend, I made a white cake from scratch (I doubled that recipe in the link to do a 9x13) and just added the creme de menthe to that, rather than using a boxed cake mix. I also made my own hot fudge. I did use a tub of frozen whipped topping from Whole Foods, rather than making my own whipped cream... I did think about making it, but decided against it. It turned out even more delicious making most of it from scratch!
I'll try to remember to take a picture of some of the leftover cake that we have at home.
Creme de Menthe Cake
1 white cake mix
1 jar fudge ice cream topping
1 container Cool Whip
Creme de Menthe liquor
Prepare the cake mix as directed (or make your own from scratch), taking 3-4 tablespoons of water out and replacing with creme de menthe. Bake as directed.
Soften the hot fudge enough to spread on top of the cake (or make your own from scratch).
Add 3-4 teaspoons of creme de menthe to the whipped topping, stir. Spread on top of cake. Its usually easier to spread the Cool Whip if you let the fudge set up a bit.
Chill in the refrigerator until you are ready to serve.
I'll try to remember to take a picture of some of the leftover cake that we have at home.

Cheesy Potatoes
I wasn't going to post this since everyone makes these already, I think. At least pretty much everyone I know has made some version of hash brown cheesy potatoes. But I figured I'd post it anyway. These are very good and super easy to prepare. I made some yesterday to go with our ham and lamb chop dinner with my cousins. These are pretty versatile in that you can use whatever cream soup you have on hand. I've used cream of broccoli, potato, celery, and mushroom in the past. My favorite is with cream of celery, so that's what I used yesterday (an organic cream of celery). I'm hoping to make my own homemade cream of celery one of these days, and I imagine these would be even more tasty with some homemade ingredients.

1 30-oz bag frozen shredded hash brown potatoes
2 cans cream soup
1 cup sour cream
1 1/2 - 2 cups shredded cheese
Mix all ingredients together in a 9x13 casserole dish. Bake at 375 for 40-45 minutes.

Meal plans and the week ahead
This week will be a bit busier than the last couple have been - it'll be nice to get back into things again. Today, we're having my grandma and my cousins Michelle, Tyson, Josh, Mandy, and Macie over for dinner, so that will be fun! My second session of Zumba starts up again on Tuesday night - I'm looking forward to it. I missed having it last week and I have several old friends in this new session, so it'll be fun to catch up with them. Thursday I'll be in Detroit for meetings. Friday is my flex day, but we're going to skip Kindermusik. Carson will be sad about that, but he'll still get to have fun. We're meeting Kevin's family in East Lansing at the MSU Butterfly House and Children's Gardens to play for a bit and then go out to lunch together afterwards - either in East Lansing or in Ionia if we end up meeting Kevin's grandparents now, too. We'll be celebrating three of Carson's cousins' birthdays that fall in March and April. Then it's home to start the baking and food prep for Easter dinner. I think we'll just hang out at home on Saturday - prepping for Easter and working on some projects inside and outside. Although, we may go up to a local easter egg hunt... we'll just see what we feel like doing.
We'll be continuing to work on Carson's new bedroom this week. We didn't work on it much at all this past week. We ended up doing projects outside or just relaxing instead. The weather is supposed to be super nice this week, so we'll see how much painting we get done again. I'd really like to have the walls done this week and get started on the doors, if not the trim. In addition to the bedroom project, I'm planning to do some more spring cleaning, and we're hoping to get quite a bit of work done outside in the yard.

Plus, it's always nice to see the pantry and freezer stocks reducing in size in preparation for the upcoming harvest season. We'll be continuing to work on Carson's new bedroom this week. We didn't work on it much at all this past week. We ended up doing projects outside or just relaxing instead. The weather is supposed to be super nice this week, so we'll see how much painting we get done again. I'd really like to have the walls done this week and get started on the doors, if not the trim. In addition to the bedroom project, I'm planning to do some more spring cleaning, and we're hoping to get quite a bit of work done outside in the yard.
I've been focusing on trying to use up some things from the pantry and freezer lately. I'll be continuing it this week. I just have quite a few things that need to be used up fairly soon. Plus, it's always nice to see the pantry and freezer stocks reducing in size in preparation for the upcoming harvest season. I'll be doing tons of preserving from the garden, orchard, and farmers' markets before I know it, so I need to get everything ready. Anyway, here's what I'm thinking for meals this week...

Bruleed Yogurt Parfaits
Forgot to post this one last night. I made these for breakfast on Friday morning. I found the idea on Baking Bites and thought it sounded good and fun. Plus, I got to try out my new kitchen torch that I inherited from my late grandma. These were super easy and very tasty. I'll definitely make these again! I made them with vanilla yogurt and thawed blueberries. Delicious! Can't wait to try out different combos!

Bruléed Yogurt Parfait
Vanilla or plain yogurt
fresh or frozen berries
sugar, regular or superfine
You will probably use 1 cup of yogurt and 1/2 cup berries per serving. Feel free to change the proportions to suit your tastes, the size of your dishes or the number of people you wish to serve.
In a single-serving heat-resistant bowl (glass or pyrex), layer yogurt and berries into 3-5 layers, making sure to top the parfait with a layer of yogurt. Sprinkle sugar generously over the top of the yogurt and toast with a kitchen torch until caramelized and bubbling. Let sugar set, then serve.
Parfait is best when berries have had a few minutes to soften.
Note: While creme brulee can go under the broiler to caramelize, I don't recommend it for this yogurt dish, as the heat from the broiler can curdle the yogurt and cause it to separate.

Meal plans and the week ahead
This week is going to feel busier than it really is, I think. In terms of plans, we have another really quiet week. But Kevin will be in Lafayette for part of the week, so that will make things feel more chaotic than they really are. Today we're heading over to my grandpa's house to go through more stuff of my grandma's and have a big family dinner. Kevin might stay home to work on some projects in the yard, but he hasn't decided yet. Today is also my mom's birthday. Carson and I made her a strawberry birthday cake yesterday that we'll take over to my grandpa's house. I don't have Zumba on Tuesday - its our week off between sessions. I'll be taking Carson in for his 2-year portraits finally, instead. Wednesday Kevin leaves for Lafayette. He'll be coming home on Friday. And Saturday we have no set plans, but I think we'll probably end up going to breakfast with my parents for my mom's birthday. So its a pretty tame week again, which will be nice. Though I doubt we'll get as much done as we would normally since Kevin will be gone for several days. We'll see, though.
Last week didn't go quite as planned with the 3rd bedroom project. I started to move the computer down to the basement play area on Sunday and realized that Kevin hadn't wired the play area yet, like I thought he had and he hadn't thought about it being an issue. So we left the computer hooked up still and sitting on the floor of the 3rd bedroom until we can get the wiring done in the play area. Kevin and his dad worked on it yesterday afternoon/evening and got everything but the light switch wired, so Kevin should be able to finish it up this week on his own. And we can move the computer down today. Most everything else is out of the 3rd bedroom, though. And it's ready to be painted. We will hopefully be painting it this week and we will hopefully have the three coats of solid paint done by the end of next weekend. Then we'll just have the stripe to paint and the really time-consuming part... the trim and doors. Even though we didn't make as much progress as we'd hoped on the 3rd bedroom, I did get some unplanned spring cleaning projects done instead, at least. I cleaned out the entire cedar closet, moved some shelves in there, and now it is finally completely organized and looks nice. I also cleaned out the closet in the playroom, which we use for coats, shoes, and misc. stuff... and had become a place to hide things that I didn't know what to do with. So that is all nice and organized now, as well. I also cleaned out Carson's closet and went through all of his summer clothes from last year to see what will fit him this year. Most of his 18m shorts still fit him (and some are still too big!), so it'll be nice not to have to buy him many new shorts. Other than some sandals and some new hats, I think he's pretty much set on clothes and gear for this spring and summer, which is very nice! So all of his spring/summer stuff is now washed and hanging in his closet.
This week I'll continue to do some more spring cleaning chores and we'll continue to work on the 3rd bedroom. I think I'm going to can the cannellini beans, as well. I canned cream of mushroom soup last week since mushrooms were on sale. And I need to clean out my car so that it looks nice for our trip in a couple of weeks. I haven't vacuumed and dusted it out, or cleaned the windows since early fall, so it is pretty filthy! I think I'll put the stuff in my car and work on it during my lunch breaks at work this week.

LaBamba Casserole
La Bamba Casserole
1 (5.25-ounce) can whole green chiles, drained (I usually skip these)
Cooking spray
1 pound ground turkey breast
1 cup chopped onion
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 garlic cloves, minced
1 (10-ounce) can diced tomatoes and green chiles, undrained
2 cups frozen whole-kernel corn, thawed
1 (16-ounce) can fat-free refried beans
1 1/2 cups (6 ounces) shredded cheddar cheese
1 cup chopped tomato (I usually just use salsa)
1/2 cup chopped green onions (I usually just use salsa)
Preheat oven to 375°.
Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square baking dish coated with cooking spray.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey, onion, chili powder, cumin, salt, and garlic; sauté 5 minutes, stirring to crumble. Add diced tomatoes; cook 5 minutes or until liquid evaporates.
Spoon turkey mixture over chiles. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375° for 30 minutes. Let stand 5 minutes; top with chopped tomato and green onions.
Yield: 6 servings (serving size: 1 1/3 cups)

Strawberry Cake
Carson and I made a strawberry cake for Nana's birthday tomorrow. I got this recipe/method from my coworker, Brenda. It uses a boxed cake mix, but it is so good. You could definitely make a homemade cake and use the same method, too, though. I just decided to use the mix for ease and convenience today. I forgot how easy a boxed cake mix is to make - wow! If I wasn't so turned off by the ingredients, I'd totally still buy them all the time. Anyway, I hope this cake goes over well tomorrow. I'm sure it will, though, because it is absolutely delicious!
I'll try to remember to take some pictures when we cut into it tomorrow and will update.
Strawberry Cake

Frozen strawberries, thawed (organic)
4-serving instant vanilla pudding (Trader Joes brand)
3 cups milk (organic)
1 8oz tub Cool Whip (I used Whole Foods Mkt brand)
Bake the cake as directed on the box. Let cool slightly. Using the end of a round tool (end of a spoon), poke holes evenly throughout top of cake.
Thaw strawberries and lightly puree in a blender or food processor. Pour strawberries into holes.
Mix together milk and pudding. Let thicken in the fridge for a few minutes. Then fold in whipped topping. Spread over cooled cake. Keep cake in refrigerator until ready to serve.

We have had these quite a few times, but I just keep forgetting to post them. This recipe is from Heavenly Homemakers. These are super easy and super yummy! We all really love them! I use my homemade ranch mix rather than a packet as listed in the recipe below. I've made these with organic red potatoes and organic yukon golds and both were delicious!
Ranch Potato Wedges

1 Tablespoon mayonnaise (I use organic canola oil mayo)
½ package ranch dip mix (I use my homemade stuff)
Scrub potatoes and slice into eight wedges each. Stir together mayonnaise and ranch dip mix in a large bowl. Toss potato wedges in mixture until coated. Lay wedges singularly on a cookie sheet. Bake at 400 degrees for 35-40 minutes.

Corned Beef and Cabbage
Corned Beef and Cabbage
1 medium onion, cut into wedges
4 medium potatoes, peeled and quartered
1 pound baby carrots
3 cups water
3 garlic cloves, minced1 bay leaf
2 tablespoons sugar
2 tablespoons cider vinegar
1/2 teaspoon pepper
1 (3 pound) corned beef brisket with spice packet, cut in half
1 small head cabbage, cut into wedges
Place the onion, potatoes and carrots in a 5-qt. slow cooker. Combine water, garlic, bay leaf, sugar, vinegar, pepper and contents of spice packet; pour over vegetables. Top with brisket and cabbage. Cover and cook on low for 8-9 hours or until meat and vegetables are tender. Remove bay leaf before serving.

Three Bean Casserole
I'll update with a picture whenever I upload pictures from the camera. We're kind of in limbo right now with our computer... the desk is in the basement and the computer is still hooked up on the floor of the 3rd bedroom. I didn't realize they hadn't already wired the play area part of the basement and Kevin didn't think about it being an issue until I started moving the computer down and we realized we couldn't plug it in down there yet. So anyway, the computer is useable, but its not convenient, not to mention we've been spending every spare minute either outside or spring cleaning. I'll update all the posts with pictures this weekend, hopefully.
Anyway, here's the recipe.
Three Bean Casserole
1 pound beef frankfurters, sliced
1 (15 ounce) can pork and beans
1 (15 ounce) can butter beans
1 (16 ounce) can chili beans, drained
1 small onion, chopped
1/2 cup brown sugar
1/4 teaspoon dried oregano
2 tablespoons distilled white vinegar
Preheat oven to 350 degrees F. In a large bowl combine the frankfurters, pork and beans, butter beans, chili beans, onion, sugar, oregano and vinegar. Mix all together and pour mixture into a lightly greased 9x13-inch baking dish. (I just mix everything right in the casserole dish to save on clean up.) Bake uncovered at 350 degrees F for 1 hour, or until cooked through and bubbly (I usually take it out after about 40-45 minutes).

Banana Pudding
I haven't made banana pudding in ages, so with some surplus ripe bananas in the fruit bowl, I figured I'd make it on Sunday. We all really like it, especially Carson and Kevin. This isn't the recipe I've used before, I couldn't find it written down in my cookbook anywhere. So this one is from AllRecipes. It was very good and very rich in vanilla flavor. We all liked it, but I still want to find my old standby recipe. Sorry, no picture... I didn't think about taking one.
Banana Pudding
1 (8 ounce) package cream cheese (organic)
1 (14 ounce) can sweetened condensed milk (organic)
1 (5 ounce) package instant vanilla pudding mix (Trader Joes stuff w/out all the junk)
3 cups cold milk (organic)
1 teaspoon vanilla extract (organic)
1 (8 ounce) container frozen whipped topping, thawed (the all-natural/70% organic stuff from Whole Foods to avoid HFCS, antibiotics, and hormones)
4 bananas, sliced (organic)
1/2 (12 ounce) package vanilla wafers (organic)
In a large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk and vanilla until smooth. Fold in 1/2 of the whipped topping.
Line the bottom of a 9x13 inch dish with vanilla wafers. Arrange sliced bananas evenly over wafers. Spread with pudding mixture. Top with remaining whipped topping. Chill.

Meal plans and the week ahead
Another fairly quiet week for us. Today we're mostly just taking it easy and working on the play area for Carson in the basement. We should finish it up today, we just have to move the computer desk and computer downstairs and we'll be done and can start a new project. We may run over to my Aunt Jeri's at 1:00 to help them tear out some carpet, but that's up in the air right now, so that might affect how much we get done here today, but maybe not. Tuesday I have Zumba. Friday is my flex day, which means Kindermusik for Carson and I! I also have another appointment at my podiatrist for my third (and final) injections. On Saturday, we're heading to the children's museum in Albion with our friends (it was postponed from two weeks ago). And I think we'll do a family movie night on Saturday night. Hopefully the weather is super nice again this week! We have really been taking advantage and playing outside, riding bikes and cars, every night when we get home from work. Everyone in our house has a bad case of spring fever, for sure!
I think we'll try to tackle another spring cleaning type project again this week. I want to clear out the 3rd bedroom so we can start painting it. We have a lot of stuff in there that we'll need to find new homes for. That will be the main focus this week. I'd also like to do some other spring cleaning chores, too.

I think we'll try to tackle another spring cleaning type project again this week. I want to clear out the 3rd bedroom so we can start painting it. We have a lot of stuff in there that we'll need to find new homes for. That will be the main focus this week. I'd also like to do some other spring cleaning chores, too.

Biggest Loser, Weeks 12, 13, 14
I haven't been posting Biggest Loser updates the last few weeks because I have been out of the office on Tuesdays and unable to weigh-in. I've been weighing myself on the scale we use on other days, though, and I'm just maintaining again. I'm glad I'm not gaining, but I need to lose still. I doubt I will win the challenge at work anymore (though it'd be awesome!). I'm sitting at 4.8% and there are three others ahead of me now at 6.2%, 7.1%, and 7.8%. So they'll be hard to catch... I'd have to lose at least 8 pounds in the next 2 weeks... and that is assuming they don't lose anymore. We'll see how it goes.
I feel like I'm starting all over again, since I've been out of it in terms of having an exercise routine and I've been drinking pop again for a few weeks. I'm starting out with some small goals each week to get me back on track again. This week, these are my goals:
1. Go all weekend without pop... I don't think this will be too hard since I don't really struggle with pop at home.
2. Limit pop during the week - no more than one per day and I'm aiming to go at least every other day without any.
3. Continue to eat breakfast each morning and come up with healthy, yet filling, mid-morning snacks. I used to be able to make it till lunch just having a cup of coffee and drinking lots of water. Now that I'm eating something for breakfast, I'm starving by 9:30am. So I have been trying to make sure I have healthy snacks on hand at my desk - raw carrots, string cheese, whole wheat crackers with peanut or cashew butter, bananas.
4. Do at least 30 minutes of exercise for three days in a row, followed by one day off, and then three days on. I'll also be alternating cardio days and strength days. I've still been getting in some walks and stairs at work, too, but I haven't listed those below. Here's my plan this week:
Sunday - stationary bike, 10 minutes; walk on treadmill (speed 4, incline 4), 20 minutes
Monday - benchpresses and arm curls
Tuesday - Zumba, 45 minutes
Wednesday - off
Thursday - box punching bag, 15 minutes; stationary bike, 15 minutes
Friday - pilates, 30 minutes
Saturday - kettlebells, 15 minutes; walk on treadmill (4/4), 15 minutes
Hopefully this will get me going again. I am starting small, but its better than doing nothing. Hopefully I can find my determination and motivation again. As much as I tried to not let it, being told that I cannot run (and therefore will not be able to do the 5k races I had planned in May and June) was a huge bummer for me. I still don't like it, but if its what I need to do to help my feet, then I'll have to do it. I'm still hopeful for the 5k Crim in August, but we'll see where I'm at in a month or two. If the injections and home therapy work and I can continue to lose weight, that will help my feet tremendously and will increase my chances of running again.

Spinach Artichoke Chicken Penne
Spinach Artichoke Chicken Penne
1 pound penne rigate or whole wheat or whole grain penne rigate
3/4 pound boneless, skinless chicken breast, 2 small pieces
1 bay leaf
1 tablespoon EVOO – Extra Virgin Olive Oil
2 tablespoons butter
1 onion, finely chopped
3 to 4 large cloves garlic, finely chopped
Black pepper
2 slightly rounded tablespoons flour
1/2 cup dry white wine
1 cup chicken stock
1 cup cream or whole milk
A few grates of nutmeg
1 cup grated Asiago or provolone cheese
1 10-ounce box chopped frozen spinach, defrosted, wrung dry and separated
1 14-ounce can artichoke hearts in water, drained well and chopped
Freshly grated Parmigiano-Reggiano
Bring a large pot of water to a boil for pasta. Salt water and cook pasta to al dente.
Meanwhile, poach chicken. Place chicken in small pan and add water to top of meat but do not cover completely. Add bay leaf and bring to a boil, reduce heat and gently simmer to cook through 10-12 minutes. Shred meat into small pieces with forks or dice into small pieces.
While chicken cooks heat EVOO in large, deep sauté pan over medium heat. Melt butter into oil and add onions and garlic, season with salt and pepper and cook 8-10 minutes, stirring occasionally. Sprinkle flour over cooked onions and garlic and stir 1 minute then whisk in white wine. Add stock and stir 1 minute then stir in cream and season with nutmeg. Thicken sauce a couple of minutes over low heat then stir in spinach and artichokes and heat through, melt Asiago or provolone cheese into sauce and turn off heat.
Drain pasta and toss with sauce and chicken to combine, adjust salt and pepper to your taste. Garnish with freshly grated Parmigiano-Reggiano cheese.
