You can go heavier on the fruit and lighter on the granola to get lots of fiber and not as much starch. And yogurt is very healthy. Plain fat free works well since the fruit and granola are sweet. Lately I often do the sweet breads/muffins too but I serve them with fruit so I fill up on lots of fruit and don't go overboard with the starch. Also, you can make scrambled eggs in the microwave in about 60 seconds. They are almost like a puffy omelette. That's how we always ate them growing up. Just mix the egg and a little milk in a bowl then microwave for 60 seconds or so (haven't made one in ages, so I don't remember the exact time...my mom would know). A little cheese sprinled on top is really good too. Just a couple ideas. I'm still working on our breakfast options too.<br /><br />Happy Birthday, Kevin!
